Chilli con carne

200g kidney beans, soaked overnight (tinned beans can be used in a pinch!)
400g minced Duns Tew Organic beef
1 medium onion, finely chopped
1 tin chopped tomatoes
4 cloves garlic, crushed
Splash extra virgin olive oil
1 fresh chilli, finely chopped, or half tsp dried crushed chilli
1 tsp ground cumin
Large pinch cayenne pepper
Pinch salt

Cook the beans until soft in ample water (about one hour) ensuring that they fast boil for at least 15 minutes.
Fry the onion and garlic in a large pan with the oil and half a glass of water until softened.
Add the mince and fry, stirring constantly, until browned.
Add the salt, chilli, cumin and cayenne pepper and fry briefly to release their flavours.
Add the tomatoes and the beans and allow to simmer on a low heat for half an hour.
Serve on a bed of rice or with chucks of crusty bread.
